Every platter and gyro comes dressed in it, and the same white sauce that started on the cart in 2005 is sold by the bottle at the counter, so it goes home with you. Hot sauce on the side. Respect it, it means it.

Shah's started at 121st and Liberty Avenue in Richmond Hill with one cart, family recipes and a line around the corner. In 2016 the first Long Island restaurant opened; today the platters are built the same way at more than two hundred locations, rice seasoned in-house, meat carved to order, sauces made fresh.

The Silver Spring shop opened in summer 2026 in the Hale Center building on Colesville Road, the first downtown spot, a short walk from the Metro, and one of the only kitchens in town serving this late.
